Moles are ancient and mysterious concoctions with ingredient lists and directions that can be intimidating, but at the basic level, it is as simple as making guacamole. Sit back and enjoy Cinco de Mayo with guacamole, green mole with shrimp and scallops, Colorado mole with chicken -- all served with rice and corn tortillas, plus crispy churros for dessert.
