"They say we're young and we don't know", but Sharon Tutko is going to share some fun facts about the beautiful purple ube, with exciting ways to prepare it, along with ways to make it interchangeable with the sweet potato. This hand-on class will create purple ube biscuits with chive-garlic butter, ube-charred corn fritters with feta seared in cast iron served with sautéed garlicky winter greens and shiitakes with crispy pancetta, fennel-spiced grilled pork tenderloin served with purple yam ravioli with sage-brown butter sauce, plus ube ice cream sandwiches with ginger crinkle cookies rolled in toasted pistachios.
