Pie Weights
Used to pre-bake pie shells ("blind baking"), these ceramic beads weigh down unfilled pie dough so that it will not rise during baking. The heavy ceramic balls hold the heat and help to evenly bake the crust. The baked pie shell can then be filled with custard or other cold fillings. Two packages are recommended to bake one standard-size pie.
