Work side-by-side with the skillful chef Sharon Tutko and delve into fish cookery using four different fish with four unique cooking techniques. This hands-on class will create herb-encrusted black sablefish seared in cast iron and finished in the oven topped with lemon-dill gremolata and lemon beurre blanc, hot-smoked hickory-seasoned trout cooked in the stovetop smoker served with charred summer corn and leek relish, baked whitefish en papillote with julienne carrots and zucchini and orange with a pinch of nutmeg, plus grilled tuna steak with pineapple-cilantro salsa, all accompanied by sautéed spinach with garlic and sweet cherry tomatoes, plus steamed rice.
