Mushroom forager Ryan Maher has shared his passion for mushrooms since 2010. Discover the incredible flavors that mushroom impart as Ryan uses them to create vegetarian versions of familiar dishes. Enjoy a French horn "scallop" served on focaccia toast with mornay sauce, lion's mane "crab cakes" with rémoulade, and maitake (also known as hen of the woods) spring rolls with sweet chile-ginger sauce inspired by Banh Mi So 1.
