Southern Louisiana native Josh Galliano pulls out the cast iron Dutch ovens and reveals the secret ingredients to authentic gumbo just in time for a Mardi Gras celebration. Work side-by-side with Josh in this hands-on class creating three distinct gumbos with traditional seasonings, including black-eyed pea gumbo with roasted tasso, gumbo z'herbes loaded with greens and rich flavors, oyster and bacon gumbo, plus a West Indies salad.
